This wonderful alternative grain penne has roots in ancient times. It’s made with Kamut Khorasan, an ancestor of the modern durum wheat and soaks up rich Italian sauces beautifully. Try it vegetarian style with thinly sliced courgettes, chopped mixed herbs and a generous grating of your parmesan.
