Turkey Meatballs in Tomato Sauce

This is our twist on spaghetti and meatballs… We have used several of our favourite products from the incredible Seggiano range and swapped the traditional beef mince for turkey to lower the fat content of the meatballs. Simply finished with a sprinkle of Parmesan for a delicious supper.

  1. For the tomato sauce: in a medium saucepan set over a medium heat, add the olive oil and diced onion. Cook for 5 minutes, stirring often, until starting to soften. Add the garlic and continue to cook for 3 minutes, stirring often, before adding the balsamic vinegar. Cook for a further 2 minutes before adding the tomatoes. 
  2. Simmer for 30 minutes over a gentle heat, stirring every now and then, until the sauce has reduced by ⅓. Add the oregano and season to taste. Remove from the heat and set aside.
  3. For the meatballs: in a large bowl, mix together the mince, breadcrumbs, cornflour, egg, herbs and a little salt and freshly ground black pepper until combined.
  4. Set a frying pan over a high heat and add a drizzle of oil. Cook a small tsp-sized piece (this will be your tester) for about 5 minutes - or until cooked through. Taste and check the flavours and adjust the seasoning of the mince mixture, as required.
  5. Shape the mince into 28-30 round balls and set onto a baking sheet or plate lined with greaseproof paper.
  6. Set a large heavy-based casserole pan over a high heat. Add the olive oil and fry the meatballs for about 5 minutes, turning until golden brown all over. Pour in the tomato sauce and simmer for 10 minutes, or until cooked through, stirring occasionally.
  7. While the meatballs simmer in the tomato sauce, cook the pasta according to packet instructions. Drain and add to the tomato and meatballs. Cook for 1 minute, stirring to coat the pasta in the sauce.
  8. Taste and check the seasoning before dividing between 4 serving plates. Sprinkle with freshly grated Parmesan and drizzle with garlic oil.
